Pain & Beurre maison
La tendance "homemade" (fait maison) est littéralement à l'honneur en ce moment. J'ai décidé, un beau jour, de me préparer du vrai beurre, un 100% crème. Pour mieux l'apprécier, un pain fait maison s'imposait. Voici donc deux recettes pour un petit-déjeuner gourmand et 100% "homemade" et délicieux.
Pour le pain blanc au raisins:
10g de levure de boulanger
1/2 c à café de sucre en poudre
25cl d'eau chaude
10cl de lait chaud
450g de farine
1 c à café de sel
1/2 cc de gingembre en poudre
1/2 cc de cannelle en poudre
150g de raisins secs
Mélanger levure et sucre en poudre. Ajoutez le lait chaud en remuant vigoureusement. Mélangez la farine, les épices et le sel. Faites un puits et y versez la levure additionnée de lait. Recouvrir d'un voile de farine et laisser reposer à température ambiante pendant 20 minutes. Travaillez la pâte et ajouter l'eau. Remuer avec une fourchette jusqu'à obtention d'une pâte élastique qui doit se détacher des parois de la terrine. Laissez reposer pendant 1h30, couvert d'un linge. La pâte doit doubler de volume. Incorporer les raisins. Pétrisser la pâte doucement sur un plan de travail fariné. Il ne faut plus qu'il y ait de petites bulles d'air. Mettre la pâte dans un plat à cake, placer au four et couvrir d'un linge humide. Laisser reposer 30 minutes, jusqu'à ce que la pâte double de volume. Mettre 1h à four chaud (220°). Le pain doit sonner creux.
Pour le beurre:
Placer un bol au congélateur pendant 10 minutes et laisser 25cl de crème fraîche à température ambiante. Mettre la crème dans le bol et fouetter pendant au moins 10 minutes. La crème va durcir et le beurre va se former. Filtrer pour retirer l'eau. Placer à nouveau le beurre dans le bol et couvrer d'eau fraîche. Foutter à nouveau et filter. Renouveller cette opération au moins 3 fois, jusqu'à ce que l'eau devienne claire. Egoutter, ajouter 1/2 c à café de fleur de sel à la vanille (ou nature) et placer au réfrigirateur. Déguster avec le pain blanc au raisin.
Homemade Bread & Butter
For the bread:
10g fresh yeast;
1/2 tea spoon sugar;
25cl water;
10cl milk;
450g flour;
1 tsp salt;
1/2 tsp ginger (in powder);
1/2 tsp cinnamon;
150g sultanas
In a bowl, combine fresh yeast, sugar and the milk (warm) and stir. In another bowl, combine the flour with salt and spices. Make a hole and add the yeast mixture in it. Cover with flour. Do not stir it. Let the mixture sit for 20 minutes. Combine and work the dough with your hands. The dough should besmooth, not sticky. Let stir at room temperature for 1h30. The dough should double. Stir in the sultanas. Turn the dough out onto a floured surface and knead. Place the dough in a floured loaf pan and cover. Put in the oven for 30min. The dough should double. Preheat oven at 220° and bake for 1hour.
For the Butter:
Place a bowl in the freezer for 10 minutes and put 25cl cream on a plate at room temperature. Put the cream in the bowl and mix well for 10 minutes. The cream will become thick. Filter to remove the water. Put the butter in the bowl and cover it of fresh water. Mix well and filter the mixture once again. Repeat this step 3 times, until the water becomes clear. Filter and place in the fridge. Enjoy with the bread!
